You should first check with your local club and see what classes are available around you. Then head down to the track and talk to some folks with different bikes and see what they are riding and the pros and cons of each.
Down our way, we have 2 Cag classes, 4.2 class, super production (about 10hp bikes) and an open 40/50 class which allows you to run either displacement. We will also most likely be adding the new 80cc 4 stroke engines that are available to that class.
Also shop around and see if you can ride some peoples bikes and see what works for you. Personally I think GRCs handle a little "slow", they are top notch machines, probably the best finish of any machine, but I think the steering is just a bit relaxed. I am of course very biased to DM's, nuff said there, and ZPFs also handle very well, but don't take my word for it, get the info yourself and make an educated decision, these bikes are not cheap, so take your time.
You may also want to just start with a Proddy bike, easily upgradeable to an open 40 or 50, but not quite so insane on the track.
